Dinner for Two: Spaghetti with Turkey Meatballs and Homemade Garlic Bread

After being away for an extended weekend with his friends, I was very excited to see my boyfriend last night and treat him to his favorite meal: spaghetti with meatballs!

Here’s the recipe and directions for my easy-to-make homemade spaghetti sauce (which he says he loves!) and Rachael Ray‘s very tasty homemade garlic bread.

You may notice as you read through that everything can be purchased at Trader Joe’s, my favorite, affordable grocery store option in New York City.

Spaghetti with Turkey Meatballs and Homemade Garlic Bread

Spaghetti with Turkey Meatballs

Ingredients:

  • One (1) can of Trader Joe’s Organic Tomato Sauce
  • One (1) can of Trader Joe’s Organic Diced Tomatoes
  • One (1) can of Trader Joe’s Organic Tomato Paste
  • One (1) bag of Trader Joe’s Flame Broiled Turkey Meatballs – surprisingly very good and full of flavor!
  • Shredded Parmesan cheese
  • Pasta
  • Crushed red pepper flakes – a must add for extra flavor!
  • Salt
  • Fresh ground pepper

Directions:

  • Bring the Tomato Sauce, Diced Tomatoes and Tomato Paste to a boil in a saucepan.
  • Add crushed red pepper flakes, salt and fresh ground pepper. Stir.
  • Add Turkey Meatballs. Stir.
  • Lower the temperature to medium and cover the saucepan. Cook for 20 minutes, occasionally stirring.
  • Cook pasta following the directions on the package.

Homemade Garlic Bread (from Rachael Ray)

Ingredients:

  • One (1) loaf of crusty bread
  • Four (4) garlic cloves
  • Two (2) tablespoons of butter
  • Two (2) tablespoons of extra-virgin olive oil
  • Fresh parsley
  • Grated Romano cheese

Directions:

  • Preheat oven to Broil.
  • Chop the parsley. Set aside
  • Split the loaf of crusty bread in half. Put in the oven for 5 to 10 minutes until slightly brown.
  • Dice the garlic cloves.
  • Add the butter, extra-virgin olive oil and diced garlic cloves to a bowl. Microwave for one (1) minute.
  • Remove the crusty bread from the oven. Brush with the melted butter, extra-virgin olive oil and diced garlic cloves mixture. Sprinkle with chopped parsley and grated Romano cheese.
  • Put the crusty bread back in the oven for 2 to 3 minutes. Remove and cut into small strips.

Both the spaghetti with turkey meatballs and homemade garlic bread were a success. In my opinion, pretty much any Rachael Ray recipe (assuming you don’t fuck it up) is a guaranteed crowd pleaser.

We also both agreed that the turkey meatballs were full of flavor and didn’t taste frozen. I would definitely buy them again. With that said, my goal is to learn how to make (Rachael Ray’s) my own meatballs.

We paired dinner with a crisp white wine that complimented the spicy crushed red pepper flakes in the spaghetti sauce.

And, lucky for me, he did the dishes!
